Preheat oven to 300°F. Butter an 8" x 8" baking dish.
Chop toast into small pieces.
In a mixing bowl, whisk together half and half, cream, eggs, salt and pepper.
Add chopped toasts, corn kernels, chilies, bacon, scallions and cheddar cheese.
Spoon the mixture into the buttered pan.
Bake for 35 to 40 minutes or until the pudding is set.
