Savory Shiitake Mushroom Bread Pudding

Preheat the oven to 350° F. Butter a 9" x 11" baking dish.
Heat oil in a skillet over medium-to-high heat. Add onions and sauté for 3 to 5 minutes or until tender. Add mushrooms and thyme and sauté until they have released all of their moisture. Remove from heat.
In a large mixing bowl, whisk together half and half, eggs, mustard, pepper and salt. Stir in cheddar cheese.
Add garlic toast and mushrooms to the prepared pan.
Pour egg mixture over all. Stir ingredients around a bit to allow egg mixture to distribute evenly. Sprinkle the top with Parmesan cheese.
Bake for 60 to 65 minutes. Allow the pudding to cool 10 minutes before serving. Serves 10 to 12.
