Directions
Step 1:

Crush pita chips.

Step 2:

Chop onion, mint and cucumber.

Step 3:

Halve cherry tomatoes.

Step 4:

Combine all ingredients except the romaine lettuce in a bowl with vinaigrette. Gently toss together.

Step 5:

Divide the romaine lettuce among the plates and spoon salad mixture on top of lettuce.
