Prepare the noodles according to package directions. Drain but keep warm.
In a large skillet, melt butter and continue to cook over medium heat until the butter has browned and smells nutty.
Add sage and shallots and cook over medium heat for 3 minutes or until shallots are tender.
Add cabbage and cook until the cabbage is wilted. Season mixture with salt and pepper.
Add hot noodles and mix together. Serve as a side dish or add prepared fish or meat for a main course.
