In a bowl, combine, cucumber, pineapple, jicama, red pepper, red onion, and mint with 1/3 cup Simply Dressed® Ginger Sesame Dressing. Arrange mixed greens on a platter; spoon cucumber mixture over the top of greens. Sprinkle with cashews. Drizzle with remaining Simply Dressed® Ginger Sesame Dressing. Serve.
