Fire up the grill for tender marinated beef or lamb kebabs served with a tomato, cucumber and feta salad.
Marinate beef or lamb and vegetables with dressing for at least 30 minutes, preferably overnight.
Place tomatoes, cucumber, feta and oregano in a bowl. Toss with dressing. Season with salt and pepper.
Thread wooden skewers, alternating lamb/beef and vegetables. Season with salt and pepper.
Heat a grill pan or grill. Lightly brush with oil. Place skewers on hot grill. Cook, turning occasionally, until each side has grill marks and lamb/beef and vegetables are cooked through, about 3 to 5 minutes per side. Remove from grill.
Serve over rice or couscous, with Tomato, Cucumber, Feta Salad.
