Black-Eyed Pea Salad

Step 1:
Place black-eyed peas in pot with 3/4 cup water. Bring to simmer, cover and cook until tender for 3 to 4 minutes. Drain.
Step 2:
Combine black-eyed peas, corn, red onion, red and yellow bell peppers, jalapeño, scallions, cherry tomatoes, and parsley in bowl.
Step 3:
Season with salt and pepper. Add lemon vinaigrette.
Step 4:
Toss to combine. Serve with bread.
