Cauliflower Crusted Buffalo Chicken Grilled Cheese

Preheat oven to 425°F. Add cauliflower florets to a food processor and pulse to coarsely chop until florets are the size of large grains of rice.
Place chopped cauliflower in a large bowl with a few tablespoons of water and microwave on high until very soft, about 5 minutes. To drain the cauliflower, place in a clean dish towel and squeeze to remove as much water as possible. Add cauliflower to a large bowl.
Add egg, mozzarella, Parmesan, salt, and pepper and mix well to form a dough. Form mixture into 4 square pieces and place on a parchment-lined baking sheet. Bake for 10 to 15 minutes until golden brown. Let cool completely.
Mix chicken and hot sauce together in a medium bowl, tossing to coat. Place 2 slices of cauliflower crust on a cutting board or work surface. Top each with cheddar cheese, chicken, more cheddar cheese, and another cauliflower crust.
Heat skillet over medium heat and lightly coat the bottom of the skillet with butter. Cook both sandwiches until cheese is melted, about 2 to 3 minutes per side. Lightly butter the top crust and flip to cook the other side.
Remove sandwiches to a cutting board and slice in half. Serve grilled cheese hot with ranch dressing for dipping.
