Cauliflower and Broccoli Alfredo
A lightened-up version of the classic pasta dish that’s just as satisfyingly creamy and delicious, and made with Reames® Homestyle Egg Noodles.

Cook noodles according to package directions. Add broccoli and 1 cup cauliflower during last 2 minutes of cooking; drain.
Meanwhile, add flour to a large saucepan. Gradually add stock, stirring constantly with a whisk, until blended. Bring to a boil over medium heat; cook 2 minutes or until thick, stirring constantly. Add remaining 2 cups cauliflower and garlic to boiling stock. Boil until very tender, 15 minutes.
Place cauliflower mixture in a blender. Add milk, butter, pepper, juice, salt, and 1/4 cup cheese. Remove center of blender lid to allow steam to escape and process until smooth. (Use a clean towel to avoid splatters, if necessary.)
Return cauliflower mixture to pan over low heat. Add pasta mixture and lemon zest; toss to coat noodles well.
Serve hot, sprinkled with more cheese and parsley, if desired.
