Heat a skillet over medium-high heat. Add bacon, cooking in batches if necessary, until fat has drained and bacon is cooked through, about 2 to 3 minutes per side. Place bacon on a paper-towel-lined plate to drain. Set aside.
Separate cinnamon rolls into 8 clusters of 3 to 4 rolls to serve as the sandwich bread.
To assemble sandwiches, turn 4 clusters of rolls upside down and place 2 tablespoons of cheddar cheese on each. Top with 2 strips of bacon and then another 2 tablespoons of cheddar cheese. Top sandwich with another cluster of cinnamon rolls.
Remove any accumulated bacon fat from the pan. Heat pan over medium heat and coat with a thin layer of butter. Cook sandwiches in batches until cheese has melted and cinnamon rolls are golden brown on one side, about 3 to 4 minutes. Spread butter on the cinnamon rolls facing up, and flip to brown the other side, another 3 to 4 minutes.
Serve grilled cheese hot.
