A refreshing combination of cucumber, mint and Marzetti® Dill Veggie Dip gets a hint of spice from the addition of cumin and garlic.
Cut cucumbers lengthwise and scoop out the seeds. Slice them into 1/2-inch pieces. Place cucumbers in a colander and sprinkle with salt. To weight down the cucumbers, place a bowl on top of the cucumbers and fill it with a few cans of food. Allow the cucumbers to release excess water for 30 minutes.
Rinse the cucumbers and pat dry with a towel and transfer to a mixing bowl. Add Marzetti® Dill Veggie Dip, onion, mint, cumin and garlic. Mix to combine and refrigerate until ready to serve.
