Stir to combine lamb, onion, parsley, coriander, cumin, cinnamon, olive oil, salt and pepper in a bowl.

Form into 4 patties.

Heat a grill pan or skillet. Lightly coat with oil. Cook patties about 4 minutes per side for medium.
