Dress up Texas Toast with prosciutto, peppery arugula and Parmesan to make these Italian-inspired mini pizzas.
Preheat oven to 425°F. Place slices of toast flat on a baking sheet. Bake until toast is golden brown on the bottom, about 3 to 4 minutes. Turn over and brown on the flip side.
Remove from oven and add a layer of sauce.
Chop mozzarella and add slices.
Add grated Parmesan cheese. Place under broiler until cheese is melted and bubbly, 2 to 3 minutes.
Add a slice of prosciutto to each pizza and top with arugula.
