Mozzarella Sticks with Balsamic Marinara

Place croutons in a food processor and process until mixture resembles fine crumbs without sticking together. Spread on a plate and set aside.
Slice mozzarella horizontally into 1/2-inch strips. Dip each mozzarella stick into the eggs, draining any excess, and then roll into the crouton crumbs. Place sticks on baking sheet lined with wax paper. Freeze for 1 to 2 hours.
Heat oil in a medium-size pot over medium-high heat. Fry mozzarella sticks in batches for 2 to 3 minutes until golden brown on all sides. Remove and place on a paper-towel-lined plate to drain.
Heat olive oil in a large skillet over medium heat. Add garlic and red chili pepper flakes and cook until fragrant, about 30 seconds. Add crushed tomatoes and stir with a wooden spoon to combine. Simmer for 10 to 12 minutes until sauce has thickened slightly. Season with salt and pepper to taste and mix in balsamic dressing. Set aside. (Recipe will yield extra sauce.)
Serve hot with balsamic marinara dipping sauce and enjoy!
