One-Pot Lemon Herb Chicken

Season chicken with salt and pepper. Heat 2 tablespoons of olive oil in large skillet over medium-high heat. Add chicken and brown on both sides, about 2 to 3 minutes per side. Remove chicken from pan and place on a plate.
Add 1 teaspoon of olive oil to pan and cook lemon slices until lightly browned, about 1 minute per side. Remove and place on a separate plate.
Add remaining oil to pan and cook onion until translucent, about 5 minutes. Add garlic, oregano, thyme, and red pepper flakes. Stir for about 30 seconds, cooking until fragrant. Add rice to the pan and stir to coat in oil. Pour in broth and vinaigrette, scraping up any browned bits from the bottom of pan with wooden spoon.
Nestle chicken in rice, cover pan, bring to a boil, and then lower heat to a simmer.
Cook until liquid is absorbed and chicken is cooked through, about 10 minutes. Arrange lemon slices on top, sprinkle with parsley, and serve.
