This seared salmon recipe includes fresh apple, cucumber, and avocado salsa made with Girard’s® Champagne Vinaigrette. It deserves a top spot on your list of 15-minute meals!
Combine apple, cucumber, avocado, mint, jalapeno, lime juice and Girard's® Champagne Vinaigrette in medium bowl. Season with salt and pepper, to taste. Cover and refrigerate until ready to serve.
Heat oil in nonstick skillet over medium-high heat. Pat salmon dry and season with salt and pepper, to taste.
Preheat the oven to 350 degrees. Cook salmon on the stove, in an ovenproof skillet, skin-side-down for 4 to 5 minutes, until skin starts to release from skillet surface.
Place skillet in hot oven and cook salmon additional 5 minutes, until fish flakes easily with a fork.
Serve salmon topped with apple and avocado salsa.
