Step 1:

Combine apple, cucumber, avocado, mint, jalapeno, lime juice and Girard's® Champagne Dressing in medium bowl. Season with salt and pepper, to taste. Cover and refrigerate until ready to serve.

Step 2:

Heat oil in nonstick skillet over medium-high heat. Pat salmon dry and season with salt and pepper, to taste.

Step 3:

Preheat the oven to 350 degrees. Cook salmon on the stove, in an ovenproof skillet, skin-side-down for 4 to 5 minutes, until skin starts to release from skillet surface.

Step 4:

Place skillet in hot oven and cook salmon additional 5 minutes, until fish flakes easily with a fork.

Step 5:

Serve salmon topped with apple and avocado salsa.
