Seafood, Cauliflower, & Pineapple Skewers
Give your guests a seafood option this grilling season! Cauliflower, pineapple, and Marzetti® Cilantro Avocado Dressing make these grilled scallop and shrimp skewers the perfect summer bite.

Slice and chop red and orange bell peppers and cauliflower into large, bite-sized pieces. Thread vegetables, shrimp, scallops, and pineapple onto the skewers in desired combinations.
Place a 1/2 cup of cilantro avocado dressing in a medium bowl. Brush skewers with dressing and set aside.
Preheat the grill or grill pan over medium-high heat. Brush the grates or pan with vegetable oil to prevent sticking. Grill skewers for 3 to 4 minutes per side until fish is cooked through and vegetables are charred.
Remove from heat and, if desired, gently remove shrimp, scallops, pineapple, and vegetables from skewers by scraping off with a fork.
Serve with a 1/2 cup of cilantro avocado dressing for dipping.
