step1 blend garlic scallions spices oil and dressing
Step 1:

In blender or food processor, add garlic, scallions, salt, paprika, chili powder, cumin, coriander, cayenne pepper, oil, lime juice and balsamic dressing. Blend until smooth.

step2 spoon puree over chicken
Step 2:

Add chicken thighs to slow cooker. Spoon puree over all and smear it onto chicken.

step3 cover and cook
Step 3:

Cover and cook chicken for 4 to 5 hours on low or until meat is thoroughly cooked.

step4 combine salsa ingredients

For the salsa, combine cucumber, radishes, red onion and cilantro in a mixing bowl.

step5 serve over rice
Step 5:

Serve chicken over rice with fresh salsa.
