Southwest Rotini Salad
Black beans, corn, cilantro, avocados, cherry tomatoes, lime juice and cheese give this pasta salad recipe a Southwestern feel.

Step 1:
Prepare rotini pasta according to package directions.
Step 2:
Rinse corn ears with water. Microwave corn for 2 to 3 minutes. When cool, scrape corn kernels off the cobs into a large bowl.
Step 3:
Add the warm rotini to the bowl with cilantro, avocado, black beans, tomatoes, lime juice, and veggie dip.
Step 4:
Gently toss together. Season the salad with salt and pepper.
Step 5:
Scatter cheese on top and serve.
