Preheat oven to 350°F. Lightly mist a small baking pan with non-stick cooking spray.

 

Cut the New York Bakery® Garlic Knots into 1/2 inch pieces.

 

Cut the tops off the peppers, and reserve. Remove the seeds and membranes from the peppers. Arrange the peppers and pepper tops in the bottom of the pan.

 

Heat the oil in a small skillet, add onion and saute for 3 to 4 minutes or until they are tender. Transfer onions to a mixing bowl; add the chopped New York Bakery® Garlic Knots, goat cheese, spinach, pine nuts, Parmesan cheese and pepper and mix to combine. Divide the mixture and fill each pepper. Bake the peppers for 35 minutes or until the peppers are tender. Place the lids on top. Serve.
