A great meal is as easy as this recipe for Vegetable Quesadilla made with cheese, spinach, and scallions and served with Marzetti® Southwest Veggie Dip.
Lay one tortilla flat on work surface. Spread 2 tablespoons Marzetti® Southwest Veggie Dip evenly over tortilla.
Spread cheese, spinach, scallions, beans and tomatoes evenly over veggie dip. Top with second tortilla.
Heat oil in nonstick skillet over medium heat. Add quesadilla to pan and cook until golden brown, about 2 minutes.
Carefully turn quesadilla over and cook for additional 2 minutes.
Remove quesadilla from skillet, cut into wedges and serve with Marzetti® Southwest Veggie Dip.
