Vegetarian Buffalo Chickpea Dip

Preheat oven to 375°F. In a food processor, combine 1 can chickpeas, tahini, garlic, lemon juice, salt and pepper. Puree until smooth. Add hot sauce and 1/4 cup blue cheese dressing and pulse until combined. Taste, adding more hot sauce if desired.
Add remaining chickpeas to food processor and pulse until chickpeas start to break down but are still chunky.
In a small greased baking dish, combine chickpea mixture and cheddar cheese. Use a spatula to spread dip evenly and to smooth top surface.
Cover baking dish with foil and bake for 30 minutes.
Garnish dip with remaining blue cheese dressing and scallions. Serve warm with chips.
