Wheat Berry and Cauliflower Salad

Add wheat berries and 4 cups of water to a medium saucepan. Cover and bring to a boil, then lower to a simmer, and cook for 45 minutes until wheat berries are tender. Drain any excess water and set aside.
Meanwhile, preheat the oven to 425°F. Place cauliflower florets in a large bowl and toss with olive oil, salt, and pepper. Spread an even layer on a parchment-lined baking sheet and roast for 20 to 25 minutes until golden brown, flipping halfway through.
Remove from oven and toss with lemon zest and thyme while cauliflower is still hot.
To assemble the salad, place the wheat berries in the bottom of a serving bowl. Add cauliflower, carrots, raisins, almonds, and sprinkle with parsley.
Add apple cider vinaigrette and toss. Serve hot or at room temperature.
