Cauliflower & Chickpea Tacos with Pineapple Salsa
This sweet and spicy taco recipe hits the spot with flavorful cauliflower and chickpeas, a fresh pineapple salsa, and Simply Ranch Dressing & Dip to top it all off.

To make the pineapple salsa, combine pineapple, jalapeño, onion, 2 tablespoons of lime juice, and cilantro in a medium bowl, and mix to combine. Season with salt and pepper, to taste, and set aside.
Preheat the oven to 400°F and line 2 baking sheets with parchment paper. In a large bowl, combine soy sauce, honey, and remaining lime juice, stirring with a whisk until honey dissolves.
Add cauliflower and chickpeas to the soy sauce mixture and toss to coat. In another large bowl, mix smoked paprika, cumin, coriander, and salt and pepper. Then, add cauliflower and chickpeas to the spice mixture and toss again to coat.
Roast on a parchment lined baking sheet until cauliflower and chickpeas are crispy, about 20 to 25 minutes, flipping halfway through.
To assemble the tacos, fill the tortillas with the cauliflower and chickpea mixture. Top them with the pineapple salsa, sliced avocado, and drizzle with ranch dressing.
