Italian Stuffed Peppers
Answer the call for comfort food with this dish of roasted bell peppers stuffed with savory Italian sausage, bread crumbs and Parmesan cheese.

Preheat oven to 350°F. Place croutons in a food processor and grind until you have 1 cup fine bread crumbs.
Cut off tops of peppers. Remove seeds and ribs.
Heat oil in a large skillet over medium-high heat. Add onions and sauté until soft and translucent, about 5 minutes.
Add garlic and sauté another minute. Add ground beef or sausage, breaking up with a wooden spoon. Season with salt and pepper. Continue to cook until no longer pink. Set aside to cool.
Stir together bread crumbs, meat, eggs, parsley, Parmesan, and red pepper flakes in a mixing bowl. Taste and season with salt and pepper as needed.
Stuff peppers with the meat filling.
Pour a layer of sauce into 8- to 9-inch casserole dish. Add stuffed peppers. Pour a little sauce over each pepper and place their tops on.
Bake until peppers are tender, about 1 hour. Serve hot with sauce spooned on top of peppers and grated Parmesan.
