Directions

Preheat the oven to 350° F. Butter a large baking dish. Place the pitted peaches into the prepared baking dish, cut side up.

Combine the sugar and cinnamon in a large bowl. Add the Sister Schubert’s® Parker House Style Rolls and toss all together. Drizzle the butter over all and mix well to coat each piece.

Spoon an equal amount of the mixture into the center of each peach. Place baking dish on the middle rack of the oven and bake peaches 20 to 25 minutes or until they are tender when pierced with a small knife. If the bread mixture is browning too quickly, place a piece of aluminum foil over the top of the peaches.

Allow the peaches to cool for 10 minutes. Pour some of the melted ice cream onto each plate. Place two baked peaches on each plate. Garnish with fresh mint and serve.

Note: baking times may vary depending upon the ripeness of the peaches.
