Strawberry Cheesecake Mini-Bites

Preheat oven to 350°F. Line mini-muffin tins with mini-cupcake liners. Melt butter in a microwave or small saucepan. In a medium bowl, combine butter and graham cracker crumbs. Press crumbs into each cupcake liner to form a crust.
Bake for 5 to 7 minutes until golden brown. Remove from oven and let cool completely. Reduce oven temperature to 325°F.
Beat cream cheese, sour cream, sugar, egg, salt, and vanilla in a medium bowl until well combined.
Spoon cream cheese mixture into each cupcake liner and smooth the top. Bake for 10 to 12 minutes, until tops are firm to the touch.
Remove from oven and let cool completely. Chill approximately 60 minutes or until ready to serve. Drizzle with chocolate fruit dip and top with strawberries.
