Our chicken caesar penne salad recipe, featuring asparagus, chicken, and cherry tomatoes, makes for a healthy delicious weeknight meal.
Prepare penne according to package directions. Rinse with cold water and set aside.
Place the asparagus and 1 tablespoon water in a microwave-safe bowl. Microwave for 1 to 2 minutes or until tender; drain.
Transfer asparagus to a large mixing bowl. Add prepared pasta, chicken and lettuce. Toss with dressing.
Divide and arrange on salad plates. Scatter the tops of the salads with tomatoes and cheese.
Add freshly ground pepper, if desired.
Serve with additional dressing.
