A rainbow of peppers plus onions, spicy tomatoes and lots of Cheddar cheese combine with fajita seasonings to give this chicken dinner a Mexican touch. The bed of noodles is an unexpected and delicious twist!

Directions

cook the chicken
Step 1:

Preheat oven to 350°F. Bring pot of salted water to boil. Cook pasta until al dente. Drain. Season chicken with salt and pepper. Heat oil in large frying pan over medium-high heat. Fry chicken strips until golden and cooked through. Remove and set aside.

cook the peppers
Step 2:

Add onion and peppers to pan and fry over medium heat until soft, about 5 to 7 minutes. Add garlic and cook 1 minute.

add the cream
Step 3:

Return chicken to pan. Add cream, broth, tomatoes and fajita seasoning. Stir to combine.

spoon the pasta
Step 4:

Spoon noodles and vegetables mixture into ovenproof dish. Sprinkle cheese over top.

Step 5:

Cook until bubbling and golden, about 20 to 25 minutes. Serve with dollop of sour cream, if you like.
