Melt butter in a medium-sized nonstick skillet over medium-low heat.
Break the eggs into a bowl and whisk until smooth.
Add eggs to the skillet and cook, stirring constantly with a rubber spatula until they are set. Season eggs with salt and pepper.
Transfer to plates and sprinkle with cheddar cheese.
Top with chives, tomatoes and caesar croutons and serve.
