Tender new potatoes and fresh kale toss with sweet corn kernels, fresh parsley and chives for a tasty potato salad. Serve warm with Marzetti® Classic Ranch Dressing.
Place potatoes in a large saucepan and cover with water. Bring potatoes to a boil, reduce heat and simmer for 20 to 30 minutes. The potatoes should be tender when pierced with a fork. Drain and cool slightly.
Cut potatoes into bite size pieces and return the potatoes to the pan.
Place the kale in a microwave safe bowl. Microwave for 2 minutes. Drain and add to the potatoes.
Add corn, chives, parsley and Marzetti® Classic Ranch Dressing to the potatoes and kale and gently warm over low heat for several minutes. Do not bring to a boil.
Serve potato salad warm.
