Soup’s on! Add some crunch to soup season by topping this cheesy broccoli cheddar soup with New York Bakery® Texas Toast Seasoned Croutons.
Heat oil in medium-size, heavy pot over medium-high heat. Add shallots and potatoes and saute for 5 minutes.
Add broccoli and tarragon and saute for 1 minute. Add stock and bring to boil. Reduce heat to medium-low, cover and cook for 8 to 10 minutes, until broccoli is tender. Remove from heat.
Puree soup with immersion blender until smooth. Alternatively, puree soup in small batches in blender and return to pot.
Stir in cheese and season with salt and pepper, to taste.
Serve soup hot topped with New York Bakery® Texas Toast Seasoned Croutons.
