cook ground chicken
Step 1:

Preheat oven to 375°F. Place ground chicken and sausage in a baking dish or non-stick skillet and season with salt and pepper. Cook meat for 15 to 18 minutes or until thoroughly cooked, chopping after 7 or 8 minutes. Drain off meat juices and add meat to a slow cooker.

Step 2:

Puree 1 cup of hominy and 1 can cannellini beans with 1 cup of chicken stock in a blender until creamy. Pour mixture into slow cooker.

microwave onion and peppers
Step 3:

In a microwave safe bowl, combine onion, peppers, jalepeño and garlic. Microwave 2 minutes or until vegetables are tender. Add mixture to slow cooker.

add the chicken stock
Step 4:

Add remaining chicken stock, cannellini beans, hominy, chili powder, oregano, cumin and salsa to slow cooker. Stir all ingredients together. Cover and cook 4 hours on low.

garnish with avocado
Step 5:

Garnish with chopped avocado and fresh cilantro.

serve the chili
Step 6:

Serve with cooked rice and your favorite slaw as a side dish.
