Ingredients

3/4 cup, divided Marzetti® Simply Dressed® Strawberry Poppyseed Dressing

4 boneless, skinless chicken breasts, shredded

2 heads Boston or 2 large heads Bibb lettuce, cleaned

2 small zucchini, cut into matchsticks

1 cup carrot matchsticks

1/3 cup pine nuts

Directions

In a mixing bowl, combine 1/2 cup Marzetti^® Simply Dressed^® Strawberry Poppyseed Dressing with shredded chicken and toss well to coat chicken.

Remove several outer leaves from each head of lettuce and set aside. Tear remaining lettuce into bite size pieces and transfer to a mixing bowl; add zucchini, carrots and remaining 1/4 cup dressing and toss together. Arrange lettuce leaves on individual plates or a platter. Place lettuce mixture on top of lettuce leaves and then top with chicken salad mixture. Sprinkle with pine nuts. Serve.
