Grilled Caesar Chicken Salad Wraps
Wrap up your lunch with this recipe for Cardini’s® Original Caesar marinated chicken, celery and scallions, all tucked inside a lettuce and tortilla envelope.

Arrange chicken in single layer in shallow dish and coat with 1/2 cup Cardini's® Original Caesar Dressing. Cover and refrigerate for 1 hour.
Heat grill pan over high heat. Once hot, reduce heat to medium and coat with oil. Remove chicken from marinade, season with salt and pepper, to taste, then add to grill pan. Cook chicken for 5 minutes without moving, then flip and cook for additional 5 minutes. Turn off heat and let chicken sit in grill pan for additional 5 minutes, until internal temperature reaches 165°F.
When chicken is cool enough to handle, dice and add to bowl with celery, scallions and remaining dressing, tossing to coat. Refrigerate until ready to serve.
To assemble wraps, lay 2 or 3 leaves of romaine lettuce on each tortilla. Fan 2 to 3 tomato slices over lettuce. Divide chicken salad evenly among tortillas. Top with Parmesan cheese.
Roll up tortillas tightly and slice in half, using toothpick to hold together, if necessary.
