Use a 2-inch cookie cutter to punch out a circle in the center of each piece of toast and Canadian bacon.
Add butter to a skillet. When melted, place toasts and their holes in the skillet and cook over medium heat. Add punched out circular piece of bacon to each hole.
Brush bacon with maple syrup.
Crack an egg into each hole. Season with salt and pepper. When whites begin to set and underside of bread is golden brown, flip each toast. Flip the toast holes.
Top toast with outer ring of Canadian bacon. Sprinkle tops of toast with cheese. Add a tablespoon of water to the pan to create steam, cover and cook until cheese is just melted. Transfer each piece of toast to a plate. Place toast holes on top and serve (with chopped tomatoes if you like).
