Roasted Beet, Cherry and Bleu Cheese Salad
On a bed of greens, Simply Dressed® Cherry Balsamic Vinaigrette, pistachios and bleu cheese crumbles bring beets to life.

Preheat the oven to 400° F.
Line a baking pan with aluminum foil. Rub the beets with oil and place on prepared pan. Bake 30 to 35 minutes or until the beets can be pierced with a knife and are very tender. Cool, peel and slice or dice the beets. (This preparation can be done up to one day in advance and then refrigerate the beets.)
In a large mixing bowl, combine all ingredients with Simply Dressed® Cherry Balsamic Vinaigrette and gently toss all together.
Serve.
