Sautéed button mushrooms and shallots top a mix of Reames® Homestyle Egg Noodles, Parmesan cheese and fresh spinach leaves for a creamy, rustic Italian favorite.
Bring a large pot of water to a boil for the noodles.
Heat the oil in a large skillet. Add the shallots and sauté 2 to 3 minutes or until they are soft. Add the mushrooms and sauté 5 to 7 minutes until they are brown.
Prepare the Reames® Homestyle Egg Noodles according to package directions, drain and keep warm.
In a bowl, whisk together the egg yolks, half and half and salt and pepper and add to the hot noodles. Mix in the mushrooms and parmesan cheese. Place on a platter and top with spinach. Add additional cheese if desired. Serve.
