Roasting cauliflower brings out its flavor and makes it the perfect base for this Greek-inspired dinner dish.
Preheat oven to 425°F. Transfer cauliflower pieces to a baking tray. Add olive oil and toss together to cover pieces with oil and season with salt and pepper. Roast for 17 to 20 minutes, shaking the pan halfway into the roasting time. Cauliflower should be tender and slightly caramelized.
Transfer cauliflower to a serving bowl; add remaining ingredients and pour Girard’s® Greek Feta Vinaigrette Dressing over all. Serve.
