Apple Stuffed Pork Loin With Cider Glaze
Savory pork loin is given a slightly tart glaze that’s perfect for a big autumn meal that’s equal parts filling and delicious.

Preheat the oven to 425°F.
For the filling, combine 2 tablespoons oil, onions, apples and sage into a microwave safe bowl. Microwave for 2 minutes.
Add diced New York Bakery® Texas Toast with Real Garlic, parsley, salt and pepper and toss to combine.
Using the back of the spoon, press the mixture together.
Butterfly the pork loin roast by cutting it horizontally, not quite all the way through. Sprinkle with salt and pepper.
Distribute the filling evenly over the pork. Roll roast and tie with kitchen twine. Rub the outside of the pork loin with the remaining oil and sprinkle with salt and pepper.
Place pork in a 9 x 13-inch roasting pan. Roast for 30 minutes.
Reduce heat to 375°F and continue to roast another 50 minutes or until a thermometer inserted into the center of the roast registers 145°F.
Transfer pork loin to a cutting board. Cover loosely with aluminum foil and allow it to rest for 15 minutes.
For the sauce, combine any pan drippings with apple cider, chicken stock and mustard in a saucepan. Bring to a boil. Combine cornstarch with 2 tbsp. cold water. Whisk into the sauce and stir until thick. Slice meat and serve with sauce.
