Give fritters a fresh twist with shrimp! This simple, one-bowl recipe starts with corn and gets plenty of flair from cilantro, scallions, jalapeño and cumin. It goes from skillet to table in no time.
 
													 
										Mix corn, shrimp, cilantro, scallions, jalapeño, cumin, salt and pepper in bowl. Stir to combine.
 
										Add flour. Whisk in eggs. Stir to combine.
 
										Shape into approximately 3-inch patties.
 
										Heat 2 tablespoons oil in skillet over medium heat. Cook patties in batches until golden brown, about 3 minutes per side. Repeat, adding more oil as needed.
 
										Place fritters on paper towels to drain.
 
										Serve with veggie dip.
