Asparagus and Pea Salad
Lightly cooked asparagus, snow peas, sugar snap peas, pea shoots, and croutons mixed with Simply Dressed® Lemon Vinaigrette tastes great over lettuce.

Bring a pot of water to a boil, add asparagus pieces and cook 2 minutes. Drain and rinse with cold water. Dry the pieces with paper towels and transfer them to a large mixing bowl. Add snow peas, sugar snap peas, pea shoots and Simply Dressed® Lemon Vinaigrette and gently toss. Arrange lettuce on plates or a large platter. Spoon asparagus mixture over lettuce and top with New York Bakery® Texas Toast Seasoned Croutons. Serve.
