Curried Quinoa Salad
Freshly cooked quinoa mixes with chopped zucchini, red bell pepper, scallions, feta cheese, peas, balsamic vinaigrette and a touch of curry in this salad.

In a small bowl, whisk together Simply Dressed® Balsamic Vinaigrette and curry powder and set aside.
Bring 1 1/2 cups water to a boil, add rinsed quinoa and bring to a boil. Cover pan with a lid and reduce the heat to a simmer. Cook about 12 minutes. Remove from heat; fluff the quinoa with a fork.
Place quinoa in a large mixing bowl; add the dressing mixture and all remaining ingredients. Gently toss together; season with salt and pepper and serve.
