Prosciutto, sweet melon, blue cheese and Simply Dressed® Light Balsamic Vinaigrette toss together for a fresh side salad.
Preheat the oven to 375° F.
Place prosciutto slices on a baking tray. Bake 3 to 4 minutes or until crispy. Remove from tray and crumble.
Place melon pieces in a small bowl; add 1/4 cup Simply Dressed® Light Balsamic Vinaigrette and toss gently. Place spinach in a large mixing bowl; add remaining dressing and toss well. Add crumbled prosciutto, cheese, melon pieces, and pepper and toss. Arrange on plates and serve.
