With this recipe, you’ll top pumpkin-spiced waffles with a sauce made of Marzetti® Classic Caramel Dip. The result: a decadent dish, perfect for brunch!
To make the sauce, combine 1/2 cup Marzetti® Classic Caramel Dip, maple syrup and apple cider in a sauce pan and bring to a simmer while whisking the entire time. Remove from heat.
In a large bowl, whisk together dry pancake mix and pumpkin pie spice. In another bowl, whisk together 3 tablespoons caramel dip, oil and pumpkin puree until smooth; beat in eggs and milk.
Add wet ingredients to the dry ingredients and fold together until the dry mix is incorporated.
To prepare the waffles, preheat a waffle maker to desired temperature. Spoon batter into preheated waffle maker. Cook to desired temperature and color. Repeat with remaining batter.
To serve, arrange waffles on a plate, pour sauce over waffles and sprinkle with pecans. If desired, serve with a dollop of whipped cream, or make it dessert by serving with a scoop of ice cream.
