Top salmon cakes with a flavorful sauce of mustard, capers, parsley, cilantro and Simply Dressed® Coleslaw Salad Dressing for a deliciously elegant dinner.
For Green Sauce: combine Simply Dressed® Coleslaw Salad Dressing with remaining Green Sauce ingredients in a food processor or a blender and blend on high until smooth. Transfer to a bowl.
For Salmon Cakes: combine salmon, Green Sauce, egg white, panko, scallions and a pinch each of salt and pepper. Using a fork or clean hands combine mixture to incorporate all ingredients. Divide mixture into quarters and form into a disk. Place on a tray lined with parchment paper.
Heat oil in a skillet over medium-high heat. Add salmon cakes and cook about 3 to 5 minutes until golden. Carefully turn each cake over and continue to cook an additional 3 to 5 minutes or until cakes are cooked. Transfer to a plate.
Combine Cabbage and 1/2 cup Green Sauce in a mixing bowl and toss gently. Divide and transfer cabbage mixture to plates. Place salmon cake on each plate and offer remaining Green Sauce. Serve.
