Step 1:

Heat oil in large pot over medium-high heat. Add onion, carrot, and celery. Sauté 5 to 7 minutes until vegetables are translucent. Season with salt and pepper. Add garlic, thyme, marjoram, paprika, and bay leaf. Cook until fragrant, about 1 minute.

Step 2:

Add peas, broth, and water, stirring to combine. Add ham hock to the pot and completely submerge in liquid. Cover pot with lid, bring to a boil, and lower heat to a simmer, cooking until peas are tender, about 45 minutes to 1 hour.

Step 3:

Remove bay leaf and discard. Remove ham hock and place on a cutting board. Carefully remove any meat from the ham hock with a knife and roughly chop. Set aside in a small bowl.

Stir lemon juice into soup and season with salt and pepper. Using an immersion blender or regular blender, puree about half the soup, and stir to combine.
