Preheat oven to 400°. Place pumpkin, chili powder, water and olive oil in a small bowl and stir together until combined. Stir in shredded cheddar cheese. Set aside.
Cut bacon into 1/2” pieces and cook in a skillet over medium-high heat until crispy, about 5 to 7 minutes. Drain on paper towels. Set aside.
Place flatbreads on a work surface and spread pumpkin sauce on each. Top with Brussels sprouts, shredded cheese and bacon.
Bake for 12 to 15 minutes, until cheese is melted and starting to brown.
Cool 5 minutes, slice and serve.
