Wow the family with these over-the-top bacon cheeseburgers sandwiched between garlic Texas toast and topped with a delicious Southern slaw.
Heat a large skillet, or grill pan, over medium heat. Grill Texas toast until golden brown, about 2 minutes per side. Set aside.
In same pan, raise heat to medium-high. Cook hamburgers for about 3 minutes per side, for medium-rare.
Mix the cabbage and carrot in a bowl. Add the dressing and toss to combine.
Assemble burgers. Spread pimento cheese on one slice of toast.
Layer on slices of tomato, onion, lettuce, 2 strips of bacon per burger, and top with Southern slaw.
