Place onion, bell pepper, cucumber, jalapeño, tomatoes and mint in a blender. Process on high speed until puréed.
Add watermelon and process again until smooth.
Taste gazpacho and add vinegar to balance the sweetness of watermelon and tomatoes.
Whisk in olive oil. Add a pinch of salt. Pulse to combine. Transfer to a bowl, cover and chill in refrigerator 1 to 2 hours.
Serve, garnished with diced watermelon, tomato, mint and cucumber.
